Pineapple Fried Rice

This is one of my new favorites.  It's great on it's own or as a side dish, and it's so easy to throw together.

1 cup Cooked Brown Rice
1/4 to 1/3 cup Cubed Pineapple
1 Scallion (sliced)
1 tsp Sesame Oil
2 TBS Low Sodium Soy Sauce or Liquid Aminos (I like to use 1 TBS of each, but you could use one or the other)
1 Beaten Egg OR 1/4 cup Egg Whites


Heat oil in a skillet over high heat.  When the oil starts to ripple add the pineapple to the skillet.  Cook for 2 minutes (stirring often).  Add the cooked brown rice and soy sauce and/or liquid aminos.  Cook for another minute (stirring constantly).

Reduce heat to medium high and move the pineapple/rice mixture to one side of the pan.  Add the beaten egg or egg white to the empty side of the pan.

When it starts to become solid scramble it and mix it into the rice mixture.  Remove from heat and stir in all but a pinch of the sliced scallions. Serve garnished with the remaining scallions.  Enjoy!

*If you want to make this more of a meal add cooked chicken, shrimp or ham.
*This recipe makes one large serving (or two small servings if you are using it as a side dish), but is wasy to double (or triple, etc.)
