Grilled Chicken Burrito Bowls

My hubby's Burrito Bowl has the works....a.k.a. cheese and sour cream ;)

My Burrito Bowl is dairy free :)

When you eat a lot of the same foods repeatedly I really think it's important to switch things up so that you don't get burned out. Even something as simple as a new marinade can make all the difference.  I've used lime juice and garlic in chicken marinades before, but the other day I decided to add green chilies and cilantro instead.  The result was SO tasty!

Burrito Bowl Ingredients:
1 lb Grilled Chile Lime Chicken (see below)
Prepared Whole Black Beans (see below)
Prepared Brown Rice (see below)
4 Cups Lettuce
1/2 Cup Copped Cilantro
2 Tomatoes (diced)
Avocado (diced or mashed into guac)
1 Bell Pepper (diced)
Low Fat Sour Cream (optional)
Cheese (optional)
Hot Sauce and/or Salsa
Lime Juice (optional)

Layer brown rice, black beans and sliced grilled chicken in a salad bowl.  Top with one to two cups of the lettuce, sprinkle with chopped cilantro, and add the veggies of your choice.  Squeeze a little lime juice over everything and them top with cheese and sour cream. Enjoy!

Grilled Chile Lime Chicken Ingredients:
1 lb This Sliced Boneless/Skinless Chicken Breasts
1 Hand full of Cilantro
1 Scallion (roughly chopped)
1 (4 oz.) Can of Diced Green Chiles
Juice & Zest of 2 Limes
1 TBS Olive Oil
2 Garlic Cloves (minced)
1/2 Tsp Ground Black Pepper
Pinch of Sea Salt

Place all ingredients in a large ziplock bag (or container with a lid).  Marinate for 20-30 minutes.  Remove chicken from marinade, shaking off any large pieces of cilantro, scallion or green chile.

Grill for about three minutes per side (depending on thickness of chicken) over high heat.  Remove from Grill and set aside while you assemble the base of the burrito bowls.

Brown Rice:
1 Cup of Uncooked Brown Rice
2 Garlic Cloves (minced)
1 Dried Bay Leaf
Chicken Stock

Cook rice according to package directions, but substitute chicken stock for half of the amount of water that the directions call for (so if the cooking instructions call for 2 cups of water you'll use 1 cup of water and 1 cup of chicken stock).  Add the minced garlic and bay leaf when you add the rice.  This will give the rice a little more flavor.

Black Beans:
14.5 Oz. Can of Whole Black Beans (drained/rinsed)
1 TBS Cumin
1/2 Tsp Garlic Salt
1/2 Tsp Ground Black Pepper
1/2 Tsp Extra Virgin Olive Oil

Combine all ingredients in a microwave safe bowl.  Microwave for one to two minutes (until beans are heated through).
