Chicken Club Sandwiches with Turkey Bacon & Avocado


 

 

 

These sandwiches are a favorite in our home.  They are so easy to throw together, but full of flavor and very filling.  I hope you enjoy them as much as we do!

Ingredients:
4 Thin Sliced Boneless/Skinless Chicken Breasts (4-6 oz. each)
Juice & Zest of 2 Lemons
3 Garlic Cloves (peeled & crushed)
Pinch of Sea Salt
1/2 tsp Ground Black Pepper
4-8 Slices of Turkey Bacon (cooked according to package directions)
1 Tsp Extra Virgin Olive Oil (optional)
8 Slices of bread (I used cracked wheat sourdough bread)
1 Avocado (sliced)
2 Tomatoes (sliced)
2 Cups of Lettuce
Olive Oil Mayo
Mustard

Combine thin sliced chicken breasts, lemon juice and zest, garlic, salt & pepper in a large zip lock bag.  Marinate for at least 30 minutes.  While the chicken is marinating cook the turkey bacon in a large skillet (follow package directions).  Remove fully cooked bacon from the skillet and set aside.  Place the same skillet you used for the bacon over medium/high heat.  If the skillet is totally dry after cooking the bacon you can add a teaspoon of extra virgin olive oil to the pan before adding the chicken.  Remove the chicken from the marinade and shake off excess liquid and garlic.  Add chicken to the heated pan and cook for 3-4 minutes per side, or until fully cooked.  Place one cooked piece of chicken, one to two pieces of turkey bacon, tomato, avocado, lettuce, olive oil mayo and mustard on each sandwich.  Enjoy!
 
Note:
-I've found that thin sliced chicken breasts come in many sizes...even within the same package there can be a big difference in the thickness of each piece of chicken.  If you find that some of your thin sliced chicken breasts are much thicker than others you can cover them in plastic wrap or put them in a plastic bag and use a rolling pin to pound them flat...or a meat tenderizer if you have one.  If you don't have a rolling pin or a meat tenderizer you could use the size of a large can.
-The sweet potato fries in the picture are store bought!  You can find healthy AND convenient options...just check the nutrition info!
