So what do you do when you have one salmon fillet and need to make dinner for two? Salmon tacos! The corn tortillas and avocado really make these tacos very filling. If you need a little something more you could always serve some black beans on the side.

These sandwiches are a favorite in our home. They are so easy to throw together, but full of flavor and very filling. I hope you enjoy them as much as we do!

This recipe was inspired by the Pioneer Woman's Corn Chowder with Chilies. If you are looking for a yummy cheat meal, I highly recommend her recipe! Sadly I can't even make the original recipe as a cheat meal because it contains dairy :( That's okay though! My version is just as yummy ;) Plus I added chicken and potatoes...which makes it nice and filling :)
Every once and a while I crave something that I know I shouldn't eat...like a crispy, crunchy, deep fried chimichanga ;) When that happens I try to find a way to satisfy the craving in a healthy way. Did you know that you can get that crispy crunchy goodness by baking your chimichangas!?!

Yes that's a giant baked potato...and no...this is not a cheat meal ;) Regular potatoes aren't horrible for you, but they tend to be prepared in not so healthy ways. Are sweet potatoes a better choice? Probably....but that doesn't mean that plain old spuds are the devil. Plus they go really nicely with salmon and a salad ;)

Confession time! I have never been good at accepting compliments when it comes to my appearance. I am confident about many things, but looks aren't one of them. It's something I've been thinking about a lot lately. I have a three year old daughter, and I worry about how my lack of confidence in this area will affect her. I want both of my children to grow up to be be healthy, strong, confident and happy individuals. So I guess I'd better do my best to be a good example, right?

Tilapia is one of my favorite staples to have on hand. Mostly because it's flavor is so mild that there are endless possibilities when it comes to how to prepare it. One of my favorites is Cornmeal Crusted Tilapia (which has kind of smokey spicy Southwest flare). Tonight I was in the mood for some different flavors, so I decided to switch things up a bit. I came up with this Pistachio Crusted Tilapia. Crunchy on the outside....flaky on the inside...tons of flavor!

When you eat a lot of the same foods repeatedly I really think it's important to switch things up so that you don't get burned out. Even something as simple as a new marinade can make all the difference. I've used lime juice and garlic in chicken marinades before, but the other day I decided to add green chilies and cilantro instead. The result was SO tasty!
Lasagna is one of my husbands favorite foods. I love it too, but not being able to eat dairy makes it kind of hard to enjoy ;) This soup is the perfect compromise! The cheeses are added as a topping to each individual bowl of soup...which means my hubby can have all of the real cheesy goodness and I can enjoy a dairy free version.

I've mentioned before that I have cheat meals every now and then (no more than once a week). I'm not on a diet with an end date, so I try to look at the big picture. I eat healthy at least 90% of the time because when I do I just feel better. My body functions better when I'm eating clean...but I'm still human! I have my vices, and having a cheat meal every now and then helps me satisfy cravings without making an impact on my health/fitness.
