Turkey Tostadas

Tostadas are a favorite in our house!  They are easy to customize so everyone can have theirs exactly how they like it.  Plus the leftovers can be used for other things...which is a great way to make leftovers less boring ;)

1 lb Lean Ground Turkey
2 Tsp Ground Cumin
1 Tsp Onion Powder
1 Tsp Garlic Powder
1/4 Tsp Chili Powder
1/4 Tsp Dried Oregano
1/2 Tsp Ground Black Pepper
1/3 Cup Salsa of your choice
3 TBS Lime Juice
1 (16 oz.) Can  Low Fat Refried Black Beans
1 Avocado (mashed with garlic salt & pepper to taste)
6 Corn Tortillas
Optional toppings: shredded cheese, diced tomatoes, chopped cilantro, sour cream, etc.

Pre-Heat oven to 350 degrees.

Place a large skillet over medium high heat.  Add lean ground turkey, cumin, onion powder, garlic powder, chili powder, black pepper.  Break the ground turkey apart and combine all the seasonings as it browns.  When the turkey is fully cooked (5-6 minutes) add the salsa, and reduce the heat to medium low.  Simmer for 5-10 minutes. 

While the seasoned turkey is simmering place the tortillas on a cookie sheet and bake until crispy (between 5-10 minutes depending on the tortillas and how crispy you want them....check after five minutes).

Heat the refried beans (either place them in a microwave safe bowl and microwave for 60-90 seconds or heat in a saucepan over low heat). 

Mash the avocado with a pinch of garlic salt and pepper.

To assemble tostadas spread a few tablespoons of refried beans on a toasted tortilla.  Spread a layer of mashed avocado on top of that.  Top with ground turkey, shredded cheese, diced tomato, etc.

If you have leftovers I recommend using some of the turkey for a taco salad ;)

Two cups of spring mix salad, 1/4 cup black beans (leftover from last nights tacos), 1/2 cup "taco flavored" ground turkey (leftover from my tostadas), avocado, tomato, yellow bell pepper, cilantro, lime juice... and a drizzle of extra virgin olive oil.
