Turkey Bacon, Spinach & Avocado Omelet
One of my favorite post workout meals is an omelet. I like to play around with different combinations, and this one is one of my favorites...
1 Large Egg
2 Egg Whites
Handful of Baby Spinach (roughly chopped)
1 Piece of Turkey Bacon (cooked to package directions & crumbled)
1 Scallion (sliced thin)
1/3 Cup Shredded Kaas Soy Pepper Jack Cheese
Olive Oil Cooking Spray
Salt & Pepper to taste
Beat together egg and egg whites. Spray a pan with olive oil cooking spray and heat over low heat. Add eggs and top with spinach and turkey bacon.
After two to three minutes add the avocado, scallion, and cheese.
Cook for another minute or two (until the edges are set up) and then fold omelet in half. Cook for another minute or until cheese is completely melted. Remove from pan and serve. I like to add a little Tabasco to mine ;)
