Tilapia Tacos with Black Beans & Fresh Avocado Salsa

These tacos are quick, easy and tasty!  Tilapia is light and flaky with a very mild flavor.  If you are trying to sneak fish past a picky eater this would be the one to try ;)   The black beans make these tacos so filling, and the fresh avocado salsa has a lot of flavor without being spicy.

You'll want to start with the black beans, as they take the longest to cook...

Black Beans:
1 (15 oz.) Can of whole black beans (drained/rinsed)
1 Tsp Extra Virgin Olive Oil
4 Roasted Garlic Cloves (or 2 raw garlic cloves)
2 TBS Lime Juice
1/4 Ground Black Pepper
1/2 Tsp Onion Powder
1 TBS Ground Cumin
1 Dried Bay Leaf

Heat the olive oil in a small sauce pan over medium heat.  Add the garlic and saute for two minutes.  Add the black beans, lime juice, pepper, onion powder, cumin and bay leaf.  Cover and reduce heat to low.  Simmer the black beans while you prepare the salsa and tilapia.

Fresh Avocado Salsa:
1 Avocado (peeled/diced)
1/2 Cup Diced Tomato
3 TBS Lime Juice
2 TBS Chopped Cilantro
1 Scallion (sliced thin)
1/4 Tsp Ground Black Pepper

Combine diced avocado, tomato, lime juice, cilantro, scallion and pepper in a small bowl (stir carefully so that you don't mash the avocado up too much.  Set aside while you prepare the tilapia.

Tilapia Tacos:
2 (4-6 oz) Tilapia Fillets
1 Tsp Extra Virgin Olive Oil
1/2 Tsp Garlic Salt
1/2 Tsp ground Black Pepper
Prepared Black Beans (see above)
Prepared Fresh Avocado Salsa (see above)
6 Corn Tortillas
Olive Oil Cooking Spray
Tacos Sauce or Hot Sauce (optional)

Heat olive oil in a skillet over medium high heat.  Rinse the tilapia fillets and pat them dry.  Sprinkle both sides with garlic salt and pepper.  Place fillets in the pre-heated pan.  Cook for 3-4 minutes on each side (depending on thickness of fillets).  Once the tilapia is cooked through turn off the heat and break the fillets apart with a fork into bite sized pieces.  Spray another pan with olive oil cooking spray and heat over medium heat.  Place tortillas in the pan and heat for 1-2 minutes on each side (you just want to warm them enough to make them pliable so that they'll fold without cracking).  Once your first tortilla is warmed place a few tablespoons of tilapia in the middle of the tortilla.  Top with prepared black beans and fresh avocado salsa.  Repeat until all tacos are assembled.  Enjoy!

* If you want to make the fresh avocado salsa spicy you can add diced jalapeno.  My hubby isn't a huge fan of spicy food, so I make it without any heat and then add hot sauce to my tacos ;)

If you have leftover black beans try using them in a yummy taco salad ;)
Two cups of spring mix salad, 1/4 cup black beans (leftover from last nights tacos), 1/2 cup "taco flavored" ground turkey (leftover from my tostadas), avocado, tomato, yellow bell pepper, cilantro, lime juice... and a drizzle of extra virgin olive oil.
