Spicy Baked Chicken

I was in the mood for something spicy the other night and decided to add a little kick to my baked chicken.  My hubby is not a fan of spicy food, so I just skipped the cayenne pepper on his.  I like to sear chicken before baking it because I feel like you get the best of both worlds...the yummy browned goodness of searing it and the juiciness from baking it.
Two Chicken Breasts
1 Tsp Dried Thyme
1/2 Tsp Bacon Salt
1 Tsp Garlic Powder
1/4 Ground Black Pepper
Cayenne Pepper
1 TBS Extra Virgin Olive Oil
1 Avocado, sliced (optional)
Scallion, sliced (optional)
Cheese (optional)
Pre-Heat Oven to 350 degrees. 
Mix together all of the seasonings and sprinkle over both sides of the chicken breasts.  Heat olive oil in a large skillet over high heat.  Sear the chicken breasts for two to three minutes each side (until they are nice and browned).  Place seared chicken in a shallow baking dish and place in the pre-heated oven.

Bake for 30 minutes (or until cooked through).  If you are using cheese place a slice of the cheese of your choice on the chicken breasts during the last two minutes of the cooking time.

Top the cooked chicken with sliced avocado and sliced scallion. Enjoy!
