Technically I should call this a BAT....I forgot to use lettuce and added avocado ;)
Salmon Fillets (the size you need should be based off of the bread that you use, but make sure it's not more than an inch thick)
Extra Virgin Olive Oil
Bread (I used cracked wheat sourdough)
Seasonings of your choice (I used sea salt, garlic powder, onion powder, ground mustard, chili powder & dried oregano).
Olive oil mayo (optional)
Pre-heat oven to 400 degrees.
Brush salmon fillets with olive oil. Sprinkle with seasonings. Place in the oven for around 30 minutes or until cooked through (cooking times will vary based on the size of the fillets). While the salmon is in the oven cook the turkey bacon according to the package instructions.
When the salmon and bacon are done use a fork to mash up the avocado. Add about a teaspoon of lemon juice per avocado as you mash it up. Spread avocado on one piece of bread and olive oil mayo on another. Place the salon on one slice, top with turkey bacon, tomato & lettuce. Put your sandwich together and enjoy!
