I'm Still Alive!'s been a ridiculously long time since I've posted.  Six months!!!  I took a break through the holidays that got just a little carried away.  Truth be told I find myself busier and busier as my kiddos get older.  I really have to consciously set aside time for me or it just doesn't happen.  This blog was a big part of my "me time", and I'm making a conscious decision to take this time back.

"Mommy...why's your butt so big?"

My three year old daughter comes up with the craziest questions.  I really never know what she's going to say next.  For example...the other day she asked me if I knew what a "hooker" was.  Before I could recover from the shock of her question she let me know that Captain Hook has one on his clothes.  Oh....a HOOK.  Phew!  She really is a constant source of entertainment!

Portobello Mushrooms Stuffed with Pistachio & Basil Pesto Chicken

My cheese-free version...still super yummy!
I love pesto!  It's so simple to make and so yummy :)  The first time I made this I just threw it together because we had some Portobello mushrooms that needed to be used, but I didn't have the ingredients needed to make stuffed mushrooms the way I normally make them.  I made a few tweaks this time and it turned out SO good.  This will definitely be going into the regular rotation in our house!

Spicy Shrimp "Alfredo"


This lactose-free "Alfredo" sauce is a great alternative to the lactose-full original.  It's also a much lighter version!  If you don't have issues with dairy (lucky you) you can substitute the Tofutti "Better Than Cream Cheese" for real cream cheese and the lactose free milk for regular milk ;)

I've been lactose intolerant for the past ten years, but it seems to be more severe as I get older =/  As a result I've had to find ways to make lactose free versions of some of my old clam chowder :)

What I've Been Up to Since March (Part 2)

I mentioned in my previous post that I've made some changes to the way I eat and how I train.  These changes resulted from a whole lot of reading.  I wasn't unhappy with the progress I was making, but I wanted to learn more about my body.  I wanted to make progress because of intentional and deliberate actions...not just trial and error.

Salmon Tacos with Avocado Mango Salsa

So what do you do when you have one salmon fillet and need to make dinner for two?  Salmon tacos!  The corn tortillas and avocado really make these tacos very filling.  If you need a little something more you could always serve some black beans on the side. 

Grilled Flank Steak Burrito Bowls

My hubby's with a little Colby Jack cheese and some fat free sour cream.
Can you tell I've been craving Mexican food lately? lol  These burrito bowls really hit the spot.  I love that they are so easy to customize.  I had mine dairy free, but my hubby enjoyed his with fat free sour cream.  My hubby is watching his carb intake, so his was light on the brown rice and beans....mine not so much ;)
